Celebrate National Eat Your Vegetables Day with Scrumptious Ink

While we all rolled our eyes when mom pushed us to eat our vegetables, it turns out she had a good point. It’s recommended that adults have between one to three cups of vegetables per day depending on their activity level. And while this may seem like a lot, luckily there are hundreds of ways you can incorporate vegetables into your diet.
Vegetables are considered to be one of the most healthy food groups, as they’re low in fat and calories, but rich in many of the most important dietary nutrients. Many vegetables are high in potassium, fiber, folic acid and vitamins A and C. Plus, no vegetable contains cholesterol. Eating a diet high in vegetables not only helps you maintain a healthy body weight, it can also prevent certain diseases such as heart disease and certain types of cancer.
For those of you that believe that a diet high in vegetables won’t provide enough protein, you couldn’t be more off! Legumes, which are vegetables that carry over into the protein group, are extremely nutritious. For example, 1/2 cup of chickpeas has the same protein power as two eggs and 1/2 cup of refried beans has the same protein power as 3 1/2 oz of chicken.
